Before discussing the different applications for Variacs lets give a brief description of how a Variacs work.  Variac transformers are layers of windings of wire on a toroidal core of laminated silicon steel.  How a variac creates variable output voltage is by moving a conductive slider along the windings.  A variac uses inductance and not resistance to reduce voltage. This is the reason you can have higher output voltage than the primary voltage on a variac.

Servo-motors is another common application for variacs, to provide a regulated AC supply.  If the main voltage change, the motor resets the variac to restore the preset voltage.  Remember Variacs are good for slowly varying voltage, but they cannot react quickly if there is a sudden change or spike.  Variacs are also used in stage lighting and dimmers and can be controlled remotely by using a servo motor. The variacs are very efficient,  quiet and generate zero harmonics or filament "singing" unlike TRIAC dimmers. The dimming range can be from zero to maximum, with no glitches in light output as the voltage is changed. 

Variacs are used in many industries that use process control systems, such as a hot-wire plastic form cutter.  Variacs applications are used for motor speed control, heaters, and anywhere else that require reliability, high efficiency and low maintenance variable AC supply is needed.
